Mung Bean Noodles

What is it?

Mung Bean sheets are made into noodle like shape and looks close to glass noodles. These noodles are the healthier version of deep fried noodles, udon noodles or egg noodles. 


Ingredients:

  • Mung Bean Sheets/ Glass noodles

  • Shredded Cucumber

  • Shredded Chicken (optional - stir fried with olive oil)

  • Sesame Seeds (for taste, roasted)

  • Peanut Sauce

  • Pepper/Chilli Oil to taste


Directions:

1. Boil Noodle Sheets till desired texture.

2. Cut chicken into small strips or shredded strips and stir fry using olive oil in a separate wok.

3. Shred the cucumber into tiny strips

4. Place noodles, shredded cucumber and chicken (only if you want, because I'm a vegetarian so didn't include this) together. 

5. Add sesame seeds, pepper and chilli oil. 

6. Drizzle with peanut sauce as desired. 



Benefits: 

Peanut Butter is ALWAYS a good idea + a great source of protein. 

Glass noodles are a healthier option as mentioned above.

With such few ingredients, it is a healthy appetiser and tastes DELICIOUS! 


In all honesty, I can eat this snack once a week if not more!

My top 5 sources of VEGETARIAN protein!

We all tend to think that protein comes from lean meat. Don't get me wrong, it does. 

But I have seen and checked multiple food labels that clearly state that some vegetarian options give you a LOT of protein and we all know how important it is while we're working out or weight training.



1. EGGS (my favorite source of protein) - some may not consider this "Vegetarian"

1 egg = 6 grams of protein

2. Peanut Butter


2 Tablespoons = 8 grams of protein 

3. Kidney Beans 



100 g = 23.5 grams of protein

4.  Almonds



A handful = 6 grams of protein

5. Greek Yoghurt

6 oz = 15 grams of protein

Go Green!

Green Smoothie


Ever feel super tired before going to work? (That's my everyday story, really. ) I randomly decided to add these ingredients and whip up a crazy healthy smoothie. 

Why is it good?

It includes healthy fats, energy and fruit benefits! Try it out and let me know how you like it. 

Ingredients:

  • 2 cups spinach
  • Coconut water
  • 1 avocado
  • 1 cube-cut apple (green apple preferred)
  • Handful of almonds (6-8 pieces)


Directions:

Add spinach, coconut water, apples and almonds and blend well. Add sliced/cut avocado and blend again for another 10 seconds. Pour into your favorite mug and sip on all that delicious and healthy green!

Have you tried this?

Hey! 

So lately I've not been to the gym or been eating healthy at all because of my leg - with an inflamed knee and semi twisted ankle, there is no motivation at all. Hopefully it gets better soon and I'll be back on my way!

However, I did try this new smoothie recipe that I LOVE! It's so healthy and it makes you feel so energetic (It's true!)

Banana Soy Smoothie

Ingredients:
Copyright to the original owner - this isn't my picture. 

1 1/4 cup unsweetened soy milk 

1/2 cup frozen blueberries

1/2 sliced frozen banana

1 tsp pure vanilla extract

Splenda to sweeten (if desired)

Ice cubes


Combine all ingredients and blend for about 20 to 30 seconds. You can add more milk if you prefer a less thicker smoothie. 

For a boost of protein, you can add organic peanut butter ( 2 spoons ).

A face to this blog - that's me!

Hey everyone!

Welcome to my blog. This is my first ever post but hey, at least you’re here and reading this right now.
I decided to start a blog to explore ideas and thoughts about random ideas that interest me. This ranges from:

  • English Literature (Yes, I actually enjoy reading Shakespeare)

Since I’m extremely new, feel free to comment or give feedback. Constructive Criticism only. If you have any negative vibes to send out, don’t bother. Keep that crap to yourself please. 

To start with, I’ll tell you a little about myself.

Indian, currently living in HK. Been brought up here and studied most of my school life here at KGV and over at South India. #goodshepherdpride
Teaching primary school children at the moment, and intend to do so for a long, long time. LOVE my JOB! (That might actually be my first proper post)
Guess that’s all there is to know really, as an introduction. 

Oh yes! Miss Lara stems from the whole being a teacher thing. In short, kids can’t say Larisha, so using Lara makes life easier for everyone. Including me. Saves me the trouble of laughing each time I hear “Laweeeesa”.
